French Onion Scalloped Potatoes

3 large onions

1 large tbsp of flour

2 cups of beef stock

1 cup cream

1 cup Gruyère cheese grated

Tbsp worceheheschester

Tsp dijon

Thyme

Bay leaf

Directions

Slice your onions and potatoes. Try to slice potatoes as thin as possible with a mandoline

caramelize your onions on medium low heat with olive oil and a pinch of salt, this will require some patience

once they’ve reached a deep brown color you can add your flour. Mix for 2-3 minutes

add your stock and bring to a light boil. Add your cream, grueye along with the dijon and worchestshire.

mix for 3-4 minutes

in a casserole dish, assemble your potatoes and sauce in layers, top with Gruyère cheese

bake covered at 400F for 1 hour, broil at the end until you have a crispy crust

you’ll be able to tell it’s done if you can pierce a fork with ease

let it cool and serve!
