High-protein Spinach & Feta Biscuits (gluten-free

1 package fresh spinach (142g), chopped
1 cup egg whites or 4-5 whole eggs
1 cup feta cheese, crumbled
1 cup almond flour
1 tsp baking powder
5-6 green onions, finely chopped
1 tbsp olive oil (for sautéing)
Salt & pepper to taste
Directions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Heat 1 tbsp olive oil in a pan over medium heat. Add the green onions and cook for 1-2 minutes until softened. Add the chopped spinach and cook until wilted, about 2-3 minutes—season with salt & pepper to taste. Remove from heat and let cool slightly.
In a large bowl, combine the egg whites, spinach mixture, almond flour, baking powder, and feta cheese. The mixture should hold together when pressed. If it is too crumbly, add a teaspoon of water or olive oil.
Form the mixture into 6 biscuit shapes or drop spoonfuls onto the baking sheet.
Bake for 20-25 minutes until slightly golden on the edges.
Let the biscuits cool for a few minutes before serving.
