Quick Pickled Green Beans
Here’s how to make them:
1 bunch green beans, trimmed
2 tbsp rice vinegar
2 tbsp soy sauce or coconut aminos
1 tbsp sesame oil
1 clove garlic, grated (I forgot the garlic today!)
1 tsp honey or sweetener
½ - 1 tsp chili flakes or chili oil (optional)
Sesame seeds + green onion to finish
Quick blanch your green beans for 2 minutes, cool in ice bath, then toss everything together. Let sit 20 minutes…if you can wait.
Crunchy, salty, a little spicy, these are addictive and so snackable.
