Hot Dog Pasta Recipe

Ingredients

2 tbsp butter

1/2 large onion (diced)

3 cloves of garlic (minced OR 1 Tbsp Brazilian Sofrito)

16 oz short pasta (I used rotelle)

32 oz jar of Marinara sauce** (I used costco brand)

2 ½ cups water**

2 cups heavy cream

2x 16oz package of hot dogs (sliced)

2 cups olives (pitted and sliced)

1/4 cup parsley (finely minced)

parmesan cheese to taste (optional)

Directions

Put your instant pot on saute mode and melt the butter.

When the butter is melted, add the onions and saute until they are transparent - about a minute.

Add the garlic, and saute another minute or two.

Turn off the pot, and add the pasta, the marinara sauce, the water, the cream, the hot dogs, and the olives. Give it all a big stir, and arrange everything so that everything or MOST of everything is covered with liquid.

Close the pot and turn on manual mode for 6 minutes.

After 6 minutes, release the pressure manually and carefully. Open the pot. Give everything a big stir, add the parsley, and stir again.

Serve with more parsley and a sprinkling of parmesan cheese.
