Ingredients

Dough

2 cups All Purpose Flour

2 cups Bread Flour

2 Eggs

2 tsp Salt

1 1/3 cup Milk

4 Tbsp Unsalted Butter

6 Tbsp Sugar

4 1/2 tsp Dry Active Yeast

Egg Wash

2 Tbsp Milk

1 Egg

Directions

Melt the butter. Combine the melted butter, milk, sugar, and yeast and set aside for 5 minutes for the yeast to activate.

In a stand mixer bowl, combine the yeast mixture, flour, salt, and egg with a dough hook set to low speed until sticky.

Then knead until smooth and tacky. 10-12 minutes on medium speed should do it. This is a moist dough, so stickiness is normal.

Remove bowl from the stand mixer and leave the dough in the bowl. Cover and let sit in a dry warm place for 1 hour or until size has doubled.

Line a baking sheet with parchment or a silicone baking sheet.

Transfer the risen dough onto a lightly floured surface. Cut dough into 24 nearly identical portions. Roll each portion into a tight ball. Place them on the baking sheet.

Mix the egg wash. Gently brush onto each roll. Allow the dough to rise for another 30 minutes.

While the dough is rising, preheat oven to 350F. Once dough has risen, bake for 18-20 minutes or until a nice deep brown color tops the rolls.

Allow them to cool before removing from the tray and separating rolls.
