Slow Cooker Miso Pork

4 pounds boneless pork shoulder
2 TBSP peanut oil
1 large yellow onion, chopped
6 medium garlic cloves, minced
1 TBSP freshly minced ginger
1/2 cup water
1/4 cup sake
2 TBSP mirin
1/2 cup red miso paste
1/2 tsp red pepper flakes
2 green onions, thinly sliced
steamed white rice for serving
Directions
Step 1
Cut the pork shoulder into bite size pieces and pat dry with paper towels.
Step 2
Heat the oil in a dutch oven or large saute pan over medium-high heat. Sear the pork, in batches, until the pork pieces are well browned. Transfer all the seared pork to the slow cooker and set aside.
Step 3
Keep your or pan at medium-high heat and add the onion, garlic, and ginger. Cook for about 1 minute then pour in the water, sake, and mirin, scraping the bottom of the pan with a wooden spoon to release any stuck on bits. Stir in the miso and red pepper flakes and bring to a boil.
Step 4
Pour the contents of the pan into the slow cooker over the pork. Cook on LOW for 8 to 9 hours or until pork is tender.
Step 5
Transfer pork and sauce to a serving bowl and sprinkle green onion on top. Serve with steamed rice.
