Zanes Oven Burgers

For the burgers:
• 1-1/3 pounds ground beef, 80% lean (80% will yield more flavor than 93% will)
• 4 tablespoons Worcestershire sauce (Worcestershire is a fine option for seasoning and will have far less tendency to stick or burn than sugar-based flavorings such as barbecue sauce)
• 1 teaspoon salt, to taste
• 1/4 cup unflavored Panko breadcrumbs (pulverized to about the size of salt granules)
• 1/2 teaspoon of liquid smoke
Optional:
• 1/4 cup of onion, diced very small
• 1/2 cup of shredded cheese
For serving:
• 4 burger buns
• 4 slices of sharp cheddar cheese
• tomato slices, optional, to taste
• lettuce leaves, optional, to taste
Directions
• Preheat the oven to 400 degrees F. and place a 10-inch cast-iron skillet or a baking sheet on the middle rack of the oven.
• Alternately, set the oven to broil and place a broiler pan in the oven.
• In a medium bowl, add Worcestershire, liquid smoke and salt and mix well. Add hamburger meat and thoroughly combine. A little at a time, sprinkle some panko over top and work it into the meat by hand, until all has been added. Mix in any optional ingredients. Divide the mixture into 4 equal parts and form into patties. It should make 4 patties about 4 inches in diameter, 3/4 of an inch thick.
• Carefully remove the preheated pan from the oven and place the patties on it.
• Return the pan to the oven and cook the burgers to your desired level of doneness (flipping when halfway done):
about 8 minutes for rare (135 degrees F)
about 9 minutes for medium-rare (140 degrees F)
about 10 minutes for medium (145 degrees F)
about 11 minutes for medium-well (150 degrees F)
about 13 minutes for well-done (155-160 degrees F)
Use a meat thermometer to ensure the beef is cooked to your desired temperature.
• Serve each burger on the buns with your desired toppings.
• Consider turning the oven to broil for the last little bit of cooking on each side, to brown the meat. Experiment, starting with 1 minute and going up or down from there according to taste.
• Let the burgers rest for 2 minutes in the air fryer.
