Cheesy Garlic Butter Mushroom Stuffed Chicken

Ingredients

4 boneless, skinless chicken breasts

1 cup mushrooms, finely chopped

1/2 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

3 tablespoons butter

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh parsley, for garnish

Directions

Preheat Oven

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Chicken

Cut a pocket into each chicken breast without cutting all the way through. In a bowl, mix together the mushrooms, cream cheese, mozzarella cheese, garlic, thyme, parsley, salt, and pepper. Stuff each chicken breast with the mushroom mixture.

Cook the Chicken

In a skillet, melt the butter over medium heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.

Bake the Chicken

Transfer the seared chicken breasts to the prepared baking sheet. Sprinkle grated Parmesan cheese over the top of each chicken breast. Bake in the preheated oven for 20-25 minutes until the chicken is cooked through and the cheese is melted.

Serve

Garnish with fresh parsley before serving.
