Carne Asada
Makes 2 cups marinade

1 cup orange juice
½ white onion, grated
½ cup roughly chopped, packed fresh cilantro stems and leaves
¼ cup soy sauce
¼ cup extra-virgin olive oil
4 garlic cloves, grated
1 fresh jalapeño pepper, grated
Juice of 1 fresh lime
1 pound skirt steak, or other protein
Kosher salt, for seasoning
Directions
In a nonreactive bowl, combine the orange juice, onion, cilantro, soy sauce, oil, garlic, jalapeño, and lime juice. Add your steak (or other protein). Make sure it's fully submerged so that the marinade is in contact with all sides. Marinate for 2 to 3 hours for steak.
Cook as desired or do as I do and get a pan ripping hot and add your steak directly from the marinade to the pan. Season heavily with salt and flip after 3 minutes; 3 minutes on each side should yield a medium rare steak.
Let rest and cube up.
