Gingerbread Pancakes

Ingredients

2 1/2 c white flour

5 t baking powder

1 t salt

1 t baking soda

1 t cinnamon

1/2 t ground ginger

1/4 c molasses

2 c milk

2 eggs, slightly beaten

6 T butter or margarine, melted

1 c raisins (optional)

Directions

  1. In large bowl, mix flour, baking powder, salt, baking soda and spices.

  2. In separate bowl, combine molasses and milk. Add eggs and stir in melted butter.

  3. Add molasses mixture to flour mixture, stir only until moistened. Fold in raisins.

  4. If batter seems too thick, add a little more milk.

  5. Bake on a hot griddle.

  6. Serve with fresh whipped cream or maple syrup.
