Mint Pesto

yield: about 2 cups

1 ½ c. olive oil

2 c. basil, lightly packed, leaves only

1 ¾ c. parsley leaves only

½ c. mint leaves only

½ tsp salt

1 T plus 1 tsp meyer lemon

¼ c. pine nuts

½ tsp garlic

1. Combine all ingredients in the blender jar, and puree until sauce is smooth.

May require some pushing around of the ingredients.
