Chinese Yam Congee

Ingredients

3.52 ounces (100 grams) Chinese Yam, peeled and chopped

1/2 cup (100 grams) short grain rice

Directions

1. Prepare Chinese Yam. Peel off the skin and cut them into cubes. Wear gloves if this process irritates your skin.

2. Wash rice and soak for 30 min. Remove from water and save the soak water

3. Add water used to soak rice in step to clay pot, and then add additional water as needed (up to 6 cups). Bring to rolling boil over high heat. Add chinese yam and rice. Bring to boil over high heat, and then reduce heat to low and continue to boil until rice swells.

4. Continue to boil until congee thickens.
