Chicken & Broccoli Alfredo

Ingredients

8 ounces uncooked linguine or whole wheat linguine

1 cup fresh or frozen broccoli florets

2 tablespoons butter

1 boneless, skinless chicken breast, or 2 boneless thighs

1 can Cream of chicken

1 can Cream of mushroom

1/2 cup milk

1/2 cup Parmesan cheese

Directions

Prepare the linguine according to the package directions in a 3-quart saucepan

Add the broccoli during the last 4 minutes ofthe cooking time

Drainthe linguine mixture well in a colander

Heat the butter in a large skillet over medium-high heat

Season the chicken with salt and pepper

Cook chicken in butter until mostly cooked, on both sides remove and let rest for 5-10 minutes before dicing into cubes.

Stir the soup, milk, cheese and linguine mixtureinthe skillet and cook untilthe mixture is hot and bubbling, stirring occasionally

Season to taste and serve with additional Parmesan cheese

Notes

Add Cajun spices and season the chicken with cajun spices to make a yummy spiced up version :)
