Ingredients

2 tbsp vegetable oil

900g pork shoulder, cut into chunks

60mI white vinegar

80ml low sodium soy sauce

6 garlic cloves, sliced

2 bay leaves

2 tsp black peppercoms

1 tbsp sugar

480ml chicken stock

Directions

1 Heat the oil in a large casserole dish over a medium-high heat. Working in batches to avoid crowding the pan, brown the pork on all sides. Transfer to a plate and set aside.

2 Add the vinegar to the dish and bubble for one minute, scraping any sticky bits from the bottom of the pan using a wooden spoon.

3 Stir in the soy sauce, garlic, bay leaves, black peppercorns, sugar and stock. Return the pork pieces to the pan and bring to a boil. Reduce the heat to low, then cover with a lid and simmer gently for I h hours.

4 Remove the lid and continue simmering for another

30 minutes until the sauce has thickened. Serve over rice.
