Greek Chicken Gyros

2 lb boneless, skinless chicken thighs
1 tsp paprika
1 tsp coriander
1 tsp cumin
1/2 tsp oregano
1/2 tsp mint, minced
1/2 tsp parsley, minced
1 tsp salt
2 tbsp olive oil
5-6 cloves garlic, minced or grated
1 lemon, zest and juice
1/4 cup yogurt
1 large onion, peeled
1/2 cup plain yogurt
1/2 cucumber shredded
1 Tbsp mint, chopped
1 Tbsp dill, fresh or dried
1/2 lemon, zest and juice
1 tsp garlic powder
1/2 tsp salt
1 cucumber, diced
2 plum tomatoes, deseeded & diced
1/2 red onion, diced
2 tbsp olive oil
1 tbsp red wine vinegar
1 tsp oregano
Directions
Marinade
Marinate chicken with all the ingredients above. To build your homemade spit, peel a large onion & cut the bottom and top off. Pierce two soaked, wooden skewers through the top of the onion. Skewer chicken thighs one by one. Roast in oven at 375 for 20-25 min. Slice it. It should have some color but still raw. Now, broil for 5-7 minutes until cooked through.
Tzatziki Sauce
Shred cucumber, wrap in paper towel and squeeze out all water. Add with rest of ingredients.
