Mediterranean Baked White Fish with Veggies

Ingredients

2 white fish fillets (cod, halibut, haddock)

1 tbsp olive oil, plus extra for drizzling

1 tsp dried oregano

1 tsp salt

½ tsp black pepper

Pinch red pepper flakes (optional)

Vegetables

1 medium zucchini, sliced

1 cup cherry tomatoes, halved

½ cup Kalamata olives, halved

¼ cup red onion, thinly sliced

3 cloves garlic, minced

To Serve

Lemon wedges

Fresh parsley, chopped

Directions

Preheat oven: Heat oven to 400°F (200°C). Lightly oil or line a baking dish.

Season fish: Pat fillets dry and rub with olive oil, oregano, salt, pepper, and red pepper flakes.

Prepare vegetables: Add zucchini, tomatoes, olives, onion, and garlic to the dish; toss lightly.

Bake: Place fish over vegetables and bake 15–20 minutes, until fish flakes easily.

Serve: Garnish with parsley and serve with lemon wedges.
