Blueberry Oatmeal Loaf (modified from Sally’s Baking)

Ingredients

Sally’s baking blueberry oat muffin recipe - slightly modified and baked into a loaf pan.

1 cup (250g) milk

1 cup (85g) old-fashioned whole rolled oats

1 and 1/2 cups (194g) wholemeal flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/2 tsp table salt

1/2 cup (113g) unsalted butter, melted, or 85g oil

(Replacing: 1/2 cup honey):

50g sugar (1/4 cup)

65g fat free Greek yoghurt (1/4 cup)

1 large egg, at room temperature

1 tsp pure vanilla extract

1 cup (140g) blueberries

Margarine for brushing

Original: 3 1/4 cup solid; 2 1/4 cup liquid

Sally’s Muffin to Bread Blueberry bread recipe ratio: 3 1/2 cups solid, 2 1/2 cup plus 1 tb liquid (she added 1/4 cup flour and 1/3 cup milk to make it a bigger loaf). My additions: 1/4 cup flour, 1/4 cup Greek yoghurt.

Directions

In a small bowl, combine 1 cup (250g) milk and 1 cup (85g) oats. Let soak for 20 minutes.

In a small bowl, weigh out 113g butter (or 85g oil) and melt in microwave.

In a small bowl, whisk 1 egg. Weigh 50g sugar, 65g yoghurt and 1 tsp vanilla extract.

In a large bowl, combine 194g wholemeal flour, 1 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp cinnamon, and 1/2 tsp salt.

Weigh out 140g blueberries and sprinkle some of the flour on the blueberries.

Combine all wet ingredients.

Pour the wet ingredients into the dry ingredients. Stir gently (lumps are ok - this should be thick and barely combined, like pancakes). When mostly combined fold in blueberries. Avoid breaking them.

Pour the batter into tin and top with oats. Bake at Gas Mark 4 for 30 min, cover with foil, and bake 40-50 mins more, until it reaches an internal temperature of 93.

Brush top of loaf with margarine. Leave to cool in pan for 1 hour then finishing cooling on wire rack.

Notes

Result: great! Rose well, chewy oats, juicy blueberries, tender loaf without being underdone. Nice tasty crust. Added to rotation!

Recipe: 1 cup (250g) milk, 1 cup (85g) oats, 1 and 1/2 cups (194g) wholemeal strong flour, 1 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp ground cinnamon, 1/2 tsp salt, 1/2 cup (113g) unsalted butter, melted, or 85g oil, Replacing: 1/2 cup honey: 50g sugar (1/4 cup), 60g yoghurt (1/4 cup), 1 egg, 1 tsp pure vanilla extract, 1 cup (140g) blueberries [Additions: 1/4 cup flour, 1/4 cup Greek yoghurt.]

Method: left oats to soak 20 min (actually left 40min), mixed everything together, preheat gas 4, bake 30 min, covered w foil another 45 min, waited to reach 93C but it only hit 92 C and I pulled it. Cool in pan.
