Ingredients

A healthy Mexican egg salad recipe that's high in protein that will keep you fit and full .

Directions

8 hard boiled eggs

One sliced onion, red, or white

Four Serrano peppers, sliced thin

1/4 cup cilantro, chopped

3/4 -1 cup of lemon lime juice (about 3 lemons and 4 limes )

Splash of white vinegar

Half a teaspoon salt and pepper

Optional toppings, Tajin or Chili oil / crisp

Boiled eggs in hot water for 12 minutes, then remove to an ice bath.

Slice one onion

Sliced four Serrano peppers or jalapeño for less spicy

Chopped 1/4 cup cilantro

Add hard-boiled eggs with the skin removed to a bowl. I like to cut some eggs in half.

Add the onions, cilantro, Serrano, lemon lime juice, peppers, salt, pepper vinegar.

Mix gently.

Refrigerate 10 to 15 minutes before eating.
