Mom's Potato Salad

1+1/2 lb. Small Red Potatoes▪️1 Small Red Onion, finely diced (1 Cup)▪️1 Garlic Clove, finely chopped▪️1/2 Cup Mayo, or more to taste▪️1 Tbsp Fresh Lemon Juice▪️1 tsp Kosher Salt▪️1 tsp Black Pepper▪️1 Bunch Parsley, finely chopped (~1 Cup)▪️
Directions
Place the potatoes in a large pot and cover with water. Bring to a boil, then simmer for 12–15 mins, or until fork-tender but not falling apart. Drain, then spread out on a baking sheet and let cool completely at room temp (about 30 mins).
While the potatoes are cooling, mix together the mayo, red onion, garlic, lemon juice, salt, and pepper.
Once the potatoes are cool, cut into quarters and mix gently with the dressing. Fold in the parsley, then taste and add more mayo if you’d like it creamier. Enjoy! Store in an airtight container in the fridge for up to 3 days.
