Lightened Up Taco Bell Copycat Mexican Pizzas

Ingredients

For the Crispy Tortilla Shells:

4 whole-grain tortillas

Cooking spray

For the Seasoned Beef:

1 lb lean ground beef

1 packet taco seasoning

1/2 cup water

For the Refried Beans:

1 can (16 oz) fat-free refried beans

For the Pizza Assembly:

1 cup reduced-fat shredded Mexican cheese blend

1 cup diced tomatoes

1/2 cup chopped green onions

1/4 cup sliced black olives

1/4 cup chopped fresh cilantro

1/2 cup non-fat Greek yogurt (optional, for garnish)

Directions

Preheat the Oven:

Preheat your oven to 400°F (200°C).

Prepare Crispy Tortilla Shells:

Lightly coat each tortilla with cooking spray and place them on a baking sheet. Bake in the preheated oven for 8-10 minutes or until the tortillas become crispy and golden brown. Set aside.

Cook Seasoned Beef:

In a skillet over medium heat, cook lean ground beef until browned. Drain excess fat and add taco seasoning and water. Simmer for 5-7 minutes until the beef is well-seasoned and the liquid is absorbed. Set aside.

Warm Refried Beans:

In a separate saucepan, warm the fat-free refried beans over medium heat until heated through. Stir occasionally to maintain a smooth consistency.

Assemble Mexican Pizzas:

Take two of the crispy tortilla shells and spread a layer of refried beans on each. Top one of the tortillas with half of the seasoned beef and sprinkle with shredded Mexican cheese.

Layer Toppings:

Place the second tortilla on top, creating a sandwich-like structure. Spread diced tomatoes, chopped green onions, sliced black olives, and fresh cilantro over the assembled Mexican pizza.

Repeat for Second Pizza:

Repeat the assembly process for the remaining two tortillas, using the remaining seasoned beef and toppings.

Bake to Perfection:

Place the assembled Mexican pizzas back in the oven for 5-7 minutes or until the cheese is melted and the toppings are heated through.

Garnish and Serve:

Once out of the oven, garnish the Mexican pizzas with a dollop of non-fat Greek yogurt, if desired. Slice each pizza into quarters for easy serving.
