Miso & Ginger Yellow Squash Soup

Ingredients:
•2 yellow squash, chopped
•1 tbsp white or yellow miso paste
•1 tsp grated ginger
•2 cups vegetable or chicken broth
•1 tsp soy sauce
•Optional: silken tofu cubes, scallions, or nori strips
Directions
Instructions:
1.Sauté squash with ginger in a pot for 3–5 minutes.
2.Add broth and simmer until squash is soft (10–12 minutes).
3.Dissolve miso paste in a bit of hot broth, then stir back in.
4.Add soy sauce, adjust salt.
5.Optional: Blend for a smoother texture. Garnish with tofu or scallions.
