Orange Glazed Salmon

1 tablespoon butter
1 pound salmon fillets
salt
pepper
1/2 cup orange juice (fresh squeezed from 1 approximately 1 orange)
2 tablespoons honey
2 tablespoons soy sauce
2 cloves garlic (minced)
1 teaspoon cornstarch (whisked with 1 teaspoon water, optional for a thicker glaze)
Directions
Heat the butter or olive oil in a large skillet on medium-high.
Season the salmon fillets with salt and pepper and add to the pan, skin side up. Cook for 3-5 minutes or until golden brown on top. Flip and cook an additional 3-4 minutes or until the internal temperature reaches an internal temp 145°F on a meat thermometer inserted into the center of the thickest portion.
Remove from the skillet to a plate and tent with foil to keep warm. Return the skillet to the stove top and lower the heat to medium.
Whisk together the orange juice, honey, soy sauce, garlic and cornstarch slurry, if using.
Add to the same skillet that you cooked the salmon in and cook until hot. The mixture will thicken in about 30-60 seconds if using cornstarch.
Return the salmon to the pan and coat with the sauce. Add additional orange slices, if desired.
