BBQ Ranch Chicken Salad

Yields: 2 to 4 servings
Ingredients:
– 2 boneless skinless chicken breasts, grilled and sliced
– 1 avocado, sliced
– 1 cup cherry tomatoes, halved
– 1 cup grilled corn kernels
– 1 cup canned black beans, drained and rinsed
– 1/2 cup cucumber, sliced or diced
– 4 cups chopped romaine lettuce
– 1/2 cup crispy fried onion strings
– Barbeque ranch dressing (see below)
For the barbeque ranch dressing:
– 1/4 cup ranch dressing
– 2 tbsp barbeque sauce
– 1 tsp lime juice
– 1/2 tsp smoked paprika (optional)
Directions
1. In a small bowl, whisk together ranch dressing, barbeque sauce, lime juice, and smoked paprika until smooth. Set aside.
2. Season chicken with salt and pepper. Grill over medium-high heat for 4–5 minutes per side until fully cooked. Slice into strips.
3. In a large bowl, combine romaine, tomatoes, corn, black beans, and cucumber.
4. Toss salad with enough barbeque ranch dressing to coat.
5. Plate and top with sliced chicken, avocado, and crispy onion strings.
6. Drizzle extra dressing over the top, if desired.
Note: Serve immediately to keep onion strings crisp.
