2 tablespoons mashed banana (riper bananas give sweeter flavor)
1 tablespoon melted butter or oil (like avocado or refined coconut oil)
1 tablespoon brown or coconut sugar
1/4 teaspoon vanilla extract
1/4 cup old-fashioned oats
1 tablespoon whole wheat flour (or oat flour to make gluten-free)
1/8 teaspoon sea salt
1/8 teaspoon cinnamon
1 tablespoon chocolate chips
1 tablespoon butter or coconut oil (melted)
1 tablespoon brown sugar
1 tablespoon applesauce (mashed banana, or pumpkin puree)
1 teaspoon unsulphured molasses
1/4 teaspoon vanilla extract
1/4 cup old fashioned rolled oats (certified gluten free, if required)
1 tablespoon whole grain or oat flour
1/4 teaspoon gingerbread spice mix
1/8 teaspoon sea salt
1 tablespoon chocolate chips or golden raisins (or a mix of both)
Directions
To a small mug add the sugar and all wet ingredients. Stir with a fork until combined.
Now add the dry ingredients and mix to combine everything.
Sprinkle a few (optional) chocolate chips on top.
Microwave the cookie in a mug on high for about 1 minute.
Careful, it will be hot! Let it cool a for a couple of minutes before enjoying this delicious mug cookie.
