Roasted Veggies With Quinoa

Ingredients

1 zucchini, chopped

1 head of broccoli, chopped

1 red onion, chopped into 1 inch pieces

1 red bell pepper, chopped into 1 inch pieces

2 carrots, chopped

Fresh herbs (parsley, basil, cilantro)

Juice of 1 lemon

1 clove of garlic, grated

Olive oil

Salt and pepper

Directions

Toss zucchini, broccoli, bell pepper, onion, and carrots with some olive oil and salt and pepper. Roast at 425°F until tender and beginning to char, 35-40 minutes. Combine that with 1 cup of cooked quinoa and 1/4 cup of fresh herbs. Whisk juice of 1 lemon, garlic, 2 tablespoons of olive oil and salt and pepper. Toss it all together.
