5 tomatoes (weighing ~120g each)
2 tsp fish sauce
Filling
300g pork
25g green onion
10g dry shiitake mushroom
10g dry wood ear mushroom
1 tbsp fish sauce
1 tsp bouillon
1/2 tsp black pepper
Directions
Add mushrooms to a bowl, pour in boiling water, and let sit to rehydrate.
Dice green onions.
Drain, rinse, and finely chop rehydrated mushrooms.
To a large bowl, add the pork and the rest of the filling ingredients.
Mix until well combined.
Cut 4 tomatoes in halves crosswise. Reserve 1 for sauce.
Scoop out the “guts” of the tomatoes into a bowl. Set aside- this will be added to the sauce.
Gently stuff the tomato halves with the filling.
Finely chop up the reserved sauce tomato and add it to the bowl of tomato “guts” from step 7.
Heat oil in a pan on medium.
Add the tomato halves, meat-side down, in a single layer.
Fry for 5 minutes.
Flip the tomatoes meat-side up.
Pour the bowl of chopped tomato into the pan and season with fish sauce.
Reduce heat to medium low and cover.
Simmer for 20 minutes.
Remove from heat and serve in a large bowl or plate.
Garnish with chopped green onion (optional) and serve with rice!
