Directions

The night before your chicken dinner go to the chicken coop and catch 2 of the biggest friers. Kill, scald, and pick the feathers off. Singe chicken or you'll have hair on your meat. Rinse well in cold water and remove internals. Cut up the chicken and let soak for several hours in cold water. Place in a large container and refrigerate overnight.

Next day: Put flour, salt & pepper in a brown paper bag. Put two large tablespoons full of grease in a pan and get hot. Place 4-5 pieces of chicken in bag at a time and shake.

Place chicken pieces in skillet and brown on both sides. Place all chicken in a roaster and put in the oven for at least 1 hour. Make gravy in the chicken skillet. Add several tablespoons of flour to grease. Add milk as needed. Season and serve.
