For the slaw:
2 cups green cabbage, thinly sliced
1 cup red cabbage, thinly sliced
1 cup carrots, grated or julienned
1 cup bell peppers (red or yellow), thinly sliced
1/2 cup green onions, chopped
1/4 cup fresh cilantro, chopped (optional)
For the dressing:
3 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon honey or maple syrup
1 teaspoon grated fresh ginger
1 teaspoon sesame seeds (optional)
Directions
1. Prepare the slaw: In a large bowl, combine the green cabbage, red cabbage, carrots, bell peppers, green onions, and cilantro.
2. Make the dressing: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, and ginger until well combined.
3. Combine: Pour the dressing over the slaw and toss until everything is evenly coated. Let it sit for about 10-15 minutes to allow the flavors to meld.
4. Serve: Sprinkle with sesame seeds before serving, if desired.
Notes
This slaw is light, crunchy, and has a nice balance of flavors that complements the richness of the pork ribs.
