Greek Chicken Mezze Platter with Lemon Drizzle Recipe

Ingredients

For the Chicken:

1 ½ lbs boneless skinless chicken thighs or breasts

3 tbsp olive oil

Juice of 1 lemon

3 garlic cloves, minced

2 tsp dried oregano

1 tsp paprika

Salt & black pepper, to taste

For the Mezze Platter:

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, thinly sliced

1/2 cup Kalamata olives

1/2 cup crumbled feta cheese

1/2 cup hummus

4 pita or flatbreads, warmed

Fresh parsley, for garnish

Lemon Drizzle:

2 tbsp olive oil

Juice of 1 lemon

1 tsp honey

Pinch of salt

Directions

Marinate Chicken: In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Coat chicken and marinate at least 30 minutes.

Cook Chicken: Grill or pan-sear chicken over medium-high heat 5–6 minutes per side until golden and cooked through. Slice into strips.

Prepare Lemon Drizzle: Whisk together olive oil, lemon juice, honey, and salt.

Assemble Platter: Arrange chicken, cherry tomatoes, cucumber, red onion, olives, feta, hummus, and pita on a large serving board or platter.

Serve: Drizzle the lemon mixture over the chicken and veggies, garnish with fresh parsley, and serve.
