Harissa Cauliflower Steak W/ Caramelised Carrot

1 garlic heads
4 large carrots
1 tsp cumin/paprika/oregano
1/2 tsp sumac
few tbsp olive oil
plenty salt n pepper
few tbsp tahini
few tbsp water
juice of 1 lemon
1 tsp miso
1 large cauliflower
few tbsp harissa paste (can use other spice pastes)
few tbsp olive oil
parsely, chilli oil, cream and crispy onions for garnish.
Directions
cut the carrots into chunks then coat in the seasonings, salt n pepper. Cut the cauliflower into steaks, coat in harissa then coat in oil and roast until charring along with the garlic.
fry thinly sliced onions in a splash of oil with some salt low and slow, stirring often until golden brown.
blend the caramelised onion, carrots and roasted garlic into a smooth sauce with the tahini, lemon juice and a splash of water.
garnish, serve and enjoy! x
