Mac N Cheese Like You’ve Never Had It Before

Using S&B Golden Curry Mild blocks to infuse the sauce with fragrant spiced depth.
This recipe comes with a warning. It’s beyond indulgent, cheesy and simply delicious.
You can find S&B Golden Curry blocks at major supermarkets like Coles and Woolworths. I love how this recipe comes together on the stove within 30 minutes. I’m using the mild blocks, but if you’re feeling spicy, you can opt for medium and hot blocks too!
This recipe below serves 4-6:
125g short pasta shape of choice
1½ cups warmed milk (plus extra to loosen the sauce if necessary)
40g unsalted butter
20g all-purpose flour
46g S&B Golden Curry Mild blocks (about half packet)
100g cheddar, grated (avoid pre-grated cheese - the caking agents mess with the sauce
consistency, okkkk)
Bring a large saucepan of salted water to the boil.
Directions
Add the pasta and cook according to the packet instructions until al dente. Drain and set aside.
Melt the butter in a large pan over medium heat. Whisk in the flour and cook for 1-2 minutes, or until pale and golden.
Slowly add the warmed milk, ¼ cup at a time whisking continuously until the sauce thickens.
Add the Golden Curry blocks, stirring until fully dissolved. Reduce the heat to low, then add the cheddar, stirring until the sauce is smooth and creamy. If the sauce is looking cakey or too thick for your liking you can simply loosen with milk if necessary.
Toss through the cooked pasta, transfer to a serving platter and enjoy immediately.
