Creamy Chicken & Bacon Mozzarella Pasta

A super quick and easy pasta recipe that is so tasty 🤤 starting with a juicy pan seared chicken breast, topped with a delicious creamy sauce and mozzarella, before combining the pasta with the same sauce and more mozzarella 🤌🏻

Ingredients (serves 2):
200g chicken breast fillet butterflied (or two thin 100g breasts)
2 tsp smoked paprika
1 ½ tsp garlic granules
1 tsp Italian herbs
Salt
Pepper
120g dry tagliatelle (or pasta of your choice)
2 streaky bacon rashers
Heaped tsp chopped garlic
150ml reduced fat single cream alternative
40g grated mozzarella
A few sprigs of parsley chopped
Directions
Season the chicken with 1/2 of the smoked paprika, garlic granules, herbs, salt and pepper. Add to a frying pan and cook through.
Meanwhile, boil the pasta in a large pan of salted water.
Once the chicken has cooked, remove from the pan and set to one side.
Grill the bacon until crispy.Add the chopped garlic to the pan along with the cream and remaining seasoning. Leave to thicken for a few minutes.
Spoon a tbsp sauce over the breasts and top with half the mozzarella. Pop in the airfryer for 2 minutes at 185 degrees celsius.
Add 50ml of pasta water to the sauce and stir before adding the remaining mozzarella. Mix well until melted and combine the pasta.
Top the pasta with the chicken, crispy bacon and fresh parsley.
