One Pot Hainanese Chicken Rice

I love Hainanese chicken rice but 3hrs to make is just not the one so this is a much quicker, 45mins to be exact, easier way to make it yet still obtain all the fragrance & flavours!! Winner winner chicken dinner! Inspo by my girl @groovyfoodiess , check her page out for some banging rice cooker recipes x

Ingredients (serves 4-5) :

4 sprigs spring onion, halved & smashed

10 thin slices of ginger, smashed

3-4 garlic cloves, smashed

1-2 sticks lemongrass, smashed

450 ml chicken stock

3 ½ cups of rice, washed

1 tsp chicken powder

5-6 chicken thighs, skin ON

1 tsp msg

1 tbsp light soy

1 tbsp turmeric

1 tbsp sesame oil

Crack of pepper

Ginger & spring onion oil:

2 heaped tbsp minced ginger

4 sprigs spring onion, finely chopped - use 3/4 for the oil and the other 1/4 to garnish soup

7-8tbsp hot oil

Chilli sauce:

2 tbsp your favourite chilli oil - I used @twohotasians Papa Yeoh’s Sambal

2 tbsp sriracha

Sweet soy:

2 tbsp soy sauce

1 tbsp sugar

1 tsp vinegar

5-6 tbsp hot water

Optional (if you want some soup to slurp)

900ml chicken stock, reduce down for 15-20 mins

1 tbsp black pepper

Ginger slices

Spring onions

Tips:

wash your chicken before placing it in the rice cooker please

I just set the rice cooker on fast cook which is the normal universal setting. It takes 20 mins and then I leave it to sit steaming for another 20 mins before serving!
