Creamy Chicken And Bacon With Crispy pots

Ingredients for 2:
2 x 150g chicken breasts (raw)
1 tsp paprika
3 rashers bacon
300g potatoes + salt/pepper to season
1/2 onion
1 tbsp olive oil for cooking/the potatoes
100ml single cream
1 tsp garlic
1 tsp dijon mustard
1 handful of kale
10g parmesan
200ml chicken stock
Directions
Cut the potatoes into small cubes then season with salt, pepper and drizzle over 1/2 tbsp olive oil
Air fry for 20 minutes at 180 degrees C
Fry the bacon until crispy then set aside
To a pan add onions and fry until soft
Season the chicken with salt, pepper and paprika then fry until golden. Set aside.
To the pan add chicken stock, cream, mustard, garlic, parmesan and kale. Simmer for 5 minutes then add back in the chicken, pop the lid on and simmer for a further 10 minutes
Take the lid off and serve with the potatoes!
This will keep in the fridge for up to 3 days.
