Banana Peanut Butter Oatmeal (no Sugar)

Ingredients

2 medium (approx 1 cup) ripe bananas

1/2 cup natural peanut butter (creamy or crunchy)

1/2 cup pure maple syrup

3 tbsp. coconut oil, melted

1/2 tsp. vanilla extract

2 cups old-fashioned rolled oats

1/2 cup chocolate chips (or cacao nibs or dried fruit)

1/4 cup finely chopped walnuts (optional)

1/4 tsp. kosher salt

(Ratio 2 1/5 cups liquid to 2 3/4 cups solid).

Directions

Preheat oven to 350ºF (Gas Mark 4) and line an 8x8" baking dish with parchment paper.

Place two medium bananas in a mixing bowl and use a fork to throughly mash. Once pureed, stir in 1/2 cup peanut butter, 1/2 cup maple syrup (or honey), 3 tbsp coconut oil (or vegetable oil), and vanilla.

Add 2 cups rolled oats, 2 cups protein powder, chocolate chips, walnuts (if using), and salt; stir to combine.

Pour mixture into prepared baking dish and transfer to the oven. Bake for 25 to 30 minutes, until set. Remove from the oven and let cool in the pan for 30 minutes. Use the parchment paper to lift the bars out of the pan and let cool completely before slicing into.

Once cooled, slice into 12 bars. (I also like sprinkling some flaky salt overtop, however this is totally optional!)

Recipe: 1 puréed banana, 1/4 cup chopped almonds, 1/4 cup sunflower and pumpkin seeds, 1/4 cup honey, 1/4 tsp vanilla extract, 1 1/2 tbsp oil, 1 tbsp milk (1/16 of a cup, to sub 1/8 cup yoghurt), 1 cup oats

Method: Gas Mark 4, 25 mins in loaf pan

Next time:

Result: made a half recipe baked in loaf pan. Worked great, but maybe too heavy with peanut butter, as I was a little sick after.

Recipe: 1/8 cup chopped almonds, 1/4 cup smooth peanut butter, 1/4 cup sunflower and pumpkin seeds, 1/4 cup honey, 1/8 tsp vanilla extract, 1 1/2 tbsp oil, 1/4 tsp cinnamon, 1 cup oats.

Method: Gas Mark 4 and forgot it for like 35 mins, in loaf pan.

Next time: omit peanut butter?

Result: Perfect. I wanted a sweet treat breakfast food to wean me off butter pastries! Gooey, sweet and toothsome.

Recipe: 1/4 cup almonds (chopped with a knife), 1/4 cup sunflower seeds, 1/4 cup pumpkin seeds, 2 medium ripe bananas (1 cup) finely puréed with a fork, 1/2 cup honey, 1/4 cup natural yoghurt (sub for 1/2 peanut butter as I had none), 1/4 tsp vanilla extract, 1/4 tsp cinnamon, 2 tbsp oil, 2 cups oats.

Method: Stirred until a thick spreadable but not pourable mixture. Put in dish lined w parchment paper. Baked on Gas 4 for 30 mins. Was set but soft. Left for a while then cut. Gooey squidgy squares very sweet!

Next time: Freeze or store the bars for breakfast to stop me eating them all at once!

2023/10/23 - calculated the solid to liquid ratio; there are slightly more solids than liquids, but I still found it gooey? Alexa had cooked it for double the time.

2023/10/07 - Made this. Alexa’s TikTok baked oatmeal recipe. My peanut butter has oil so I only added 2 tbsp oil. WAY too sugary and somewhat gooey. 1/2 cup honey and 2 ripe bananas is overkill. No peanut butter taste! Would skip sugar n see.
