15-Minute Broiled Cod with Tomatoes & Herbed Mayonnaise

Ingredients

¼ cup mayonnaise

3 tablespoons chopped herbs such as basil, tarragon or cilantro

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt, divided

½ teaspoon ground pepper, divided

1 ¼ pounds cod, cut into 4 portions

2 medium tomatoes, sliced

Directions

Position rack about 4 inches from heat source and preheat broiler to high. Line a rimmed baking sheet with foil.

Stir mayonnaise, herbs, garlic powder, onion powder, ¼ teaspoon salt and ¼ teaspoon pepper together in a small bowl. Sprinkle the remaining ¼ teaspoon each salt and pepper on both sides of cod. Place the fish on the prepared baking sheet and spread the mayonnaise mixture over each piece. Top with tomato slices. Broil until the fish flakes easily, about 8 minutes.
