Coffee Bourbon Chicken Thighs using The Eye Opener BBQ Rub

4 LB – Bone-In Chicken Thighs
¾ Cup – Eye Opener Bourbon Coffee Rub
1 Stick – Butter
Directions
Preheat your grill or smoker to 275 degrees.
Trim the chicken thighs as needed.
Season the chicken thighs generously on all sides.
Place the thighs on the grill, skin side up, over indirect heat for 45-60 minutes until the internal temperature reaches 170 degrees.
Melt the butter and baste the thighs.
Increase the temperature of the grill to 375 and cook for an additional 20 minutes to render the skin.
Remove from the grill and rest for 5-10 minutes before serving.
