Microwave Sticky Toffee Pudding

Ingredients

50g finely chopped dates

2 tbsp hot water

1/8 tsp baking soda

25g butter

1 1/2 tbsp light brown sugar

2 tbsp beaten medium-sized egg

1 1/2 tbsp self-raising flour

30ml double cream

10g unsalted butter

2 tbsp light brown sugar

Directions

To prepare the pudding: Grease a large mug with 2 tbsp butter, then melt in microwave and let cool.

In a small bowl, combine 4 tbsp blocked dates, 2 tbsp freshly boiled water, and 1/8 tsp baking soda to make a rough chopped date mixture. Let cool.

Meanwhile, for the sauce: Add 2 tbsp double cream, 1 tbsp butter and 1 tbsp sugar to a bowl and microwave for 1 minute, stirring halfway, until bubbling. Optionally, pour half into the cooking mug to create a thickened base (pour the butter into the dates first).

For the pudding: In a small bowl, remove the yolk casing from 1 egg and stir until uniform. Reserve half of the mixture in a glass in the fridge.

In the same bowl, combine 1/2 egg, 4 tbsp soaked dates, 1 1/2 tbsp brown sugar and 2 tbsp melted and cooled butter. Gently fold in 1 1/2 tbsp self raising flour until just combined.

Transfer the pudding mixture to the mug. Microwave for 2 mins, stopping after 1 minute, 30 seconds and 15 seconds to shake the mug to unstick the sides. The pudding should be completely cooked through with no liquid.

Add sauce to the mug and enjoy, or run a knife around the sponge and tip onto a plate, and add sauce on top.

Notes

2023-12-05:

Result: Tasty, perfectly cooked and fast.

Recipe: As written with 1 tbsp sugar not 1 1/2 tbsp. I also rewrote for clearer instructions in tbsp.

Method: Microwaved 1 min, 1 min, 15 seconds.

Next time: Needed more stickiness. Sauce is generous so try leaving it to soak in sauce in countertop or Nigella’s method of pricking sponge all over and pouring sauce on top.
