Meal Prep Quesadillas

8 tortillas (I like TJ’s homestyle)
20oz cooked chicken
1 cup black beans
1 bell pepper, diced
1/3 large onion, diced
2/3 cup plain greek yogurt, 0%
8 servings lite Mexican cheese
taco seasoning, any other seasoning you want to add
Directions
preheat oven to 425
I had chicken pre cooked (grilled)
chop peppers, onion, and chicken
cook peppers and onion in a pan
add one cup of black beans
once everything’s cooked add taco seasoning and Greek yogurt
if tracking macros, you separate your chicken into 8 sections of 2.5 oz for easier tracking/accuracy
spray sheet pan and lay out your tortillas
add the filling from the pan into the tortillas
add your chicken
add cheese, esp around outer edge to keep closed
close and bake for ~10 mins
take them out and eat one while the others cool (65 then you can put in the freezer. I set the whole tray in the freezer for a bit before bagging all together.
REHEATING: I just microwave for 2.5 mins but I have an old, slow microwave. I have found that if they were crispy when you took them out of the oven and you let them cool before bagging, they will stay pretty crispy!
