One Pot Tofu Lo Mein

Ingredients

1 tbsp sesame oil

1 small onion or shallot, finely chopped

1 inch ginger, peeled and grated

2 garlic cloves, minced

1 packages extra firm tofu, liquid squeezed out

2 packages uncooked ramen noodles, spice packages discarded

1 ½ cups vegetable broth

1/4 cup soy sauce

1/4 cup brown sugar

1 head broccoli, cut into bite-sized florets

1 cup sliced baby corn

1 cup grated carrots (optional)

1 tbsp cornstarch

1/4 cup sesame seeds

Hoisin sauce and green onion for garnish

Directions

In a large pot, heat oil over medium heat. Add shallot, ginger and garlic - sauté for a few minutes until softenened.

Crumble the tofu with your hands and sauté for 5 minutes.

Add ramen, broth, soy sauce, brown sugar, broccoli, baby corn and carrots to the pan, trying to ensure that the ramen is at the bottom of the pan, near the liquid. Cover and let simmer until ramen starts to soften and be malleable.

Remove the lid and mix the ingredients together well.

Push the noodle mixture aside and mix cornstarch with liquid that appears.

Cook for another few minutes.

Top with sesame seeds and green onion.

Garnish with hoisin sauce if desired.
