Rhubarb Custard Pie

Ingredients

4 eggs

1/2 cup mascarpone cheese

1 cup sugar

2 tbsp vanilla

1 tsp salt

1 tbsp flour

4 1/2 cups rhubarb

Blend together the eggs, cheese, sugar, vanilla, salt, flour until smooth.

Fill one bottom pie crust and bake at 350 for 45-50 minutes or until the top is golden brown.

Let cool at room temperature before chilling in the fridge for 4 hours.

Slice and enjoy! 🥧❤️

Use pre-made pie crust or graham crust?
