3 cups cooked chicken, shredded or diced
1 can (10.5 oz) condensed cream of chicken soup
1 cup sour cream
½ cup mayonnaise
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 sleeve Ritz crackers, crushed
¼ cup unsalted butter, melted
Salt and pepper to taste
Chopped parsley, for garnish (optional)
Directions
Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
In a large bowl, mix shredded chicken, cream of chicken soup, sour cream, mayonnaise, cheddar cheese, and mozzarella cheese. Season with salt and pepper.
Spread the chicken mixture evenly into the prepared baking dish.
In a separate bowl, combine crushed Ritz crackers with melted butter. Sprinkle over the casserole.
Bake for 25-30 minutes, or until the top is golden brown and bubbly.
Garnish with chopped parsley, if desired. Serve warm.
