Ingredients

  • 2 cups chicken or beef stock

  • 3 tablespoons unsalted butter

  • 3oz carrots

  • 2oz celery

  • 4oz onion

  • 1 pound ground meat

  • 2 tbsp tomato paste

  • 1 tbsp anchovy paste

  • 2 tbsp dry white or red wine

  • 1/4 cup heavy cream

  • red pepper flakes

  • parmesan

  • 12oz pasta

Directions

  1. Process veggies

  2. Sear meat then set aside

  3. Saute processed veggies for 3-4 minutes with red pepper flakes

  4. Add tomato paste and anchovy paste, saute for another minute

  5. Add stock and return meat to pot

  6. Reduce to a simmer and cook for 3 hours

  7. Add cream

  8. Serve with pasta and top with parmesan
