Fasolakia w/ Peas Carrots Potato

Ingredients

1 shallot

2 cloves garlic

Dill

Mint

Parsley

1 container of chicken stock

1 small can of crushed tomatoes

2 russet potatos, peeled

Tomato paste

1 small bag of green beans trimmed

Directions

Saute shallot and garlic in lathi

Add a squeeze of tomato paste and cook off

Add small handful of chopped dill and saute

Add a splash of chicken stock

After 5 mins add the can of crushed tomatoes and add potatoes

Add salt and pepper

Bring to a boil then down to a simmer for 15 mins

Add green beans, mint, parsley

Cook another 30 mins or until ready

Notes

Make ahead and 30 mins before serving reheat on low
