Frosted Peanut Butter Bars

2 1/4 cups large flake oats
1 cup crispy rice cereal
1 cup roasted peanuts
1/2 teaspoon salt
1/2 teaspoon baking soda
1/3 cup honey
1/2 cup smooth peanut butter
2 tablespoons butter
1 teaspoon vanilla extract
Frosting (or 1/4 cup of peanut butter, smoothed)
3 cups powdered sugar
1/4 cup milk
2 tablespoons peanut butter
1 teaspoon vanilla
Directions
Preheat oven to 350 F. Line a large baking sheet* (at least 9×13 inches) with parchment paper.
Combine the oats, crispy rice cereal, chopped peanuts, salt and baking soda in a medium size mixing bowl.
In a microwave safe bowl, mix together honey, two thirds of the peanut butter, and the butter. Place in the microwave for 1 minute. Remove and stir until the butter melts completely.
Mix in the vanilla extract and then mix the wet with the dry ingredients.
Transfer the mixture to the parchment lined baking sheet. Spray or oil a small rolling pin and roll over the mixture until it is completely flat.
Place in the preheated oven for 15 to 20 minutes or until the bars are slightly golden on top.
Microwave the remaining remaining third of peanut butter for 30 seconds to 1 minute and then pour it over the oat mixture.
Remove the baking sheet from the oven and allow the bars to cool on the sheet for 10 minutes before cutting them into bars while the bars are cooled, but still somewhat soft. Once cut, place the bars on a cooling rack to cool completely (or in the fridge to cool more quickly).
Store the bars in a sealed container or wrapped in plastic wrap.
