2 tbsp fennel seeds
4 tbsp coriander seeds
2 tbsp cumin seeds
1 tsp mustard seeds
1⁄2 tsp fenugreek seeds
5 cardamom pods, seeds only
5 cloves
1 tsp black peppercorns
1 tbsp uncooked rice
2 sprigs fresh curry leaves
Directions
Place a wide-bottom frying pan on a medium heat. Add all the ingredients and dry roast until the mustard seeds start to pop.
Turn off the heat and allow to cool completely. Blend the roasted ingredients to a fine powder in a spice grinder. Transfer to a sealed jar until required.
