Thai Mango & Cilantro Salad

Ingredients

2 ripe mangoes, julienned

1 cup shredded carrots

1 red bell pepper, thinly sliced

1/3 cup fresh cilantro, chopped

2 green onions, sliced

2 tbsp roasted peanuts or cashews, crushed (optional)

For the dressing:

3 tbsp fresh lime juice

1 tbsp fish sauce (or soy sauce for vegetarian)

1 tbsp honey or maple syrup

1 tsp sesame oil

1 small garlic clove, minced

1/2 tsp chili flakes (adjust to taste)

Directions

In a large bowl, combine mangoes, carrots, bell pepper, cilantro, and green onions. (5 minutes)

In a small bowl, whisk all dressing ingredients until well combined. (2 minutes)

Pour dressing over the salad and toss gently to coat. (2 minutes)

Top with crushed peanuts or cashews if using. Serve immediately 😋 (1 minute)
