Apple Cinnamon Breakfast Quesadillas

2 medium apples, peeled and diced
1 tablespoon butter
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 flour tortillas
2 tablespoons cream cheese or vanilla yogurt (optional)
1 teaspoon powdered sugar (optional for garnish)
Directions
Peel and dice the apples into small cubes.
In a skillet over medium heat, melt the butter. Add apples, brown sugar, and cinnamon. Cook for 6–8 minutes until the apples are soft and coated.
