Creamy Italian Sausage Rigatoni

2 carrots (peeled and chopped)
2 celery stalks (chopped)
1 onion (diced)
olive oil
1 lb ground Italian sausage
12 oz rigatoni noodles
garlic
salt & pepper
basil
parsley
oregano
thyme
red pepper flakes
15oz tomato sauce
1 cup chicken broth
1 cup heavy cream
handful of fresh spinach (chopped)
Directions
boil rigatoni al dente according to package directions
heat olive oil in a sauté pan and brown Italian sausage
add in carrots, celery, onion, garlic, and seasonings and sauté until veggies are fragrant and tender
stir in tomato sauce, chicken broth and heavy cream and bring to a boil
lower heat and simmer sauce for 10 minutes
mix in cooked rigatoni and chopped spinach
top with grated Parmesan
