Korean-style ground pork (with optional Thai basil)

SAUCE MIX (combine in small bowl):
- 3 tbsp gochujang
- 2 tbsp soy sauce
- 2 tbsp brown sugar (or 1.5 tbsp honey)
- 1 tbsp sesame oil
- 1 tbsp mirin (if you have it)
AROMATICS:
- 4-5 cloves garlic, minced
- 1 tbsp ginger, minced
- 1 large onion, diced
- 1 red bell pepper, sliced (adds color and sweetness)
- Optional Thai basil leaves
- Optional: 2-3 green onions, sliced (save some green parts for garnish)
FOR COOKING:
- 1 lb ground pork
- Neutral oil for cooking
- Toasted sesame seeds for garnish
Directions
Mix sauce ingredients in bowl
2. Heat pan over medium-high heat
3. Add bit of oil, sauté onions until softening (3-4 min)
4. Add garlic and ginger, cook 1 minute
5. Add ground pork, break up and cook until starting to brown
6. Add bell pepper, stir fry 1-2 minutes
7. Add sauce mixture, stir well
8. Cook until pork is done and sauce thickens slightly (5-7 min)
9. Turn off and add Thai basil if using
10. Finish with:
- Sesame seeds
- Green onion tops
- Extra drizzle of sesame oil if desired
Serve over rice with:
- Kimchi if you have it
- Quick cucumber salad (can make while meat cooks)
- Optional fried egg on top
